Mock Fried Rice


I love this recipe when I am trying to cut out carbs or when I need to eat more veggies. You will need:

Cauliflower
Olive Oil
Green Onions
Ham
Soy sauce
Eggs
Peas(optional)
Carrot(optional)

I vary the amount by what I have on hand.  Coat heavily with olive oil the bottom of a large skillet. Chop the cauliflower into rice size pieces and add to the pan cooking on high until tender. Add in chopped ham,onions, and carrots/peas if desired. Then push the contents of the pan to one side and all some more oil and crack several whole eggs into the oil. Scramble the eggs in the oil and then stir to incorporate into the mixture. Remove from heat and add soy sauce to taste.
